The benefits to be derived from this work are not restricted to
the individual, but are received with regenerative power, through the
family, by the whole civic system-the city, state, and nation. Homes
make the nation, and "a nation can be no better than its homes."
Since woman determines the character of the home and gives impulse
to all its activities, good citizens can not promote a more effective
means for uplift and improvement than by a general and dignified
study of Home Economics.
DOMESTIC SCIENCE
I. (a) FOOD WORK.-This subject includes a study of the
history and manufacture of foods, processes used in cooking, classification,
principles of cookery, chemical composition of foods, the
digestibility, nutritive value, economic value, and uses of foods. Practicum
includes judging, selection, preparation, and serving of typical
foods. Text: Elementary Domestic Science, Food and Cookery, by

(b) HOUSEHOLD HYGIENE.-The surroundings for a healthful
house, building, and furnishing. The supplies and wastes, methods of

preparation, and combination of food materials. Home and company
