Department of Home Economics

The term Domestic Science includes cooking, a study of foods,
their production, manufacture, value in the diet and cost; chemistry
of food and nutrition, dietetics, household chemistry, home nursing,
and invalid cookery; cost of living and household accounts. Thus
the subject has the three aspects-the utilitarian or hand work, the
applied science, and the social economics.
The field covered by Domestic Art is so broad that it is difficult
to state all its aims. The following have been prominent in making
the course here described:
1. To make art principles the fundamental basis for all construction
work.
2. To relate school life with the life of the home.
3. To allow as great freedom of development as is consistent
with intelligent work.
4. To make an introduction to the ethical side of the textile
world by a study of the fibers and processes of manufacture as affecting
the shopper of today.
5. To get a clearer conception of the cost of shelter, the cost of
clothing, and the cost of living.
As the home is the unit of society, home-making relates to all
human activities. The profession of home-making certainly includes
some study in the great natural laws relating to life. The homemaker
must know some of the principles of chemistry, the chemistry
of living, of everyday life, of the substances met with about the
home in cooking, cleaning, and care of the home.
Home Economics will be recognized as the department in which
the student is helped to interpret the facts of science, the theory of
color, the beauty of form in ways that make more efficient the individual
life and results in its work will be seen in cleaner streets,
houses better constructed and more beautifully decorated, food better
selected and prepared, higher aesthetic and ethical standards. It
embraces knowledge which will be needed at all times by our women.53
