Snacks A Plenty
A nice dip for evenings on the
perch tjscs 1 cup heavy cream,
whipped, 2 tabiespoons horse-
radish, '2 teaspoon minced onion
ant) 4 tabiespoons deviied ham.
Children love these: peel ba-
nanas, spear with a wooden
skewer, dip in meited chocoiate.
Piace in freezing compartment
until chocoiate is firm.
Roll shrimp or pineapple
wedges with whole, canned water
chestnuts in bacon, fastening with
a wooden pick. Broil until bacon
is crisp.
Sprinkle potato chips lightly
with garlic or onion sait, grated
cheese, iemon juice or parsley.
Place in heated oven for a few
minutes, then serve hot.
Make appiesauce nut bread,
slice thinly, and spread with cream
cheese and chopped dates.
Pineapple chunks rolled in sof-
tened cream cheese, then rolled
in finely chopped mint leaves are
delicious by themselves or in
salad.
Helen's Favorite:
Quick Frozen Preserves
16 ounce package frozen
strawberries or peaches
2 tablespoons powdered pectin
Si cttp sugar
Place frozen fruit In tightly
covered saucepan; cook over
high heat about 2 minutes.
Stir occasionally to break fruit.
Stir in pectin. Bring to a rapid
boil and bolt 1 minute. Add
sugar and bring to a full roll-
ing boil. Boil 1 minute while
stirring constantly. Pour mix-
ture into jelly glasses and chill
until It sets. Pour melted par-
affin on top.

foods to make interesting salads, main dishes and desserts. Now
that the peach season is here, try this Peach Cottage Cheese
Uchght aa developed by the Borden Kitchen.
Peach Cottage Cheese Delight
(Makes 8 to 8 servings) - ^
tablespoons (2 envelopes) 3 cups (24-ounces) Borden's
Creamed Cottage Cheese
2 egg whites
2 cups sliced peaches,
sweetened
OR
1 (No. 2%) can sliced
.. peaches, drained
unfavored gelatine
cup sugar
teaspoon salt
egg yolks, beaten
cup homogenized milk
teaspoon almond extract
teaspoon vanilia extract
teaspoon nutmeg
.1" of double boiler, combine gelatine, % cup of sugar and
salt. Sttr In beaten eggs and milk. Cook over hot water, stirring
constantly until mixture thickens, about 5 minutes. Remove fi
heat. Add flavorings. Cool. Sieve cottage cheese Into a large bowtt
sttr tn cooled gelatine mixture. Chill in refrigerator untii mixture
mounds shghtly when dropped from a spoon, about 15 minutee.
Heat egg whites until stiff but not dry; gradually add remaining
^ until very stiff. Fold into cheese mixture. Pour Into
hghtiy buttered 2 quart mold. Chill In refrigerator 2 houra or
unttl nrm. Unmold. Serve with oeaches. Garnish with straw-
berries, If desired.
