Woman’s Thursday Club News

Our Feb. 5th meeting was
held in home of Virginia Little.
President Fran Turney
welcomed 20 members. We
were delighted to have Audrey
Raley with us again.
Wilma Greer introduced the
program on Producers and
Screenwriters with the
following quote from Fred
Allen: "A celebrity is a person
who works hard all his lift to
become well known, then wears
dark glasses to avoid being
recognized." Frances Turney,
presenting the program,
intrigued us as she first told of
Margo Jones, theater director-
producer and pioneer of the
American resident theater
movement. Bom in Livingston,
Texas, Jones graduated from
what is now Texas Woman's
University. Mrs. Tumey told of
a personal experience she had of
listening to Jones speak: "...She
had a dynamic personality , and
received a five minute standing
ovation." A co-director of friend
Tennessee William's "The Glass
Menagerie", Jones founded the
first nonprofit resident theater
supported by the Dallas
community. Theater '47
opened in June 1947 and was
housed in the Gulf Oil Building
on the grounds of
Fair Park in Dallas. The
theater was the first professional
arena theater (theater -in-the-
round) in the country and was
the first modern nonprofit
professional resident theater. J
ones took new plays from her
Dallas season and produced
them on Broadway and on tour.
During Margo Jones's
management of the theater, from
1947 to 1955,70 percent of the
plays she produced were world
premieres. She died in Dallas in
1955, accidentally poisoned by
carbon tetrachloride that had
been used to clean the carpet in
her apartment.

Roddenberry, the creator of Star
Trek. Bom in El Paso, Texas,
the writer/producer/actor was
also a licensed pilot and was on
the LA Police Force from 1949-
56. Roddenberry originally
conceived the television show
Star Trek as a "Wagon Train to
the stars" and it was created as
an adult science fiction series.
Having a cast of continuing
characters, the series spawned
an industry of fan clubs and
spinoffs. Among Roddenberry's
other credits include the
production of "The Lieutenant"
which inspired the toy G.I. Joe.
Roddenberry's cremated
remains are among the first to be
released into outer space.
Aaron Spelling grew' up the
son of poor Jewish immigrants
in Dallas, Texas. He attended
Southern Methodist University
where he was the only student to
direct a major play in the history
of SMU. He was also a
cheerleader at the university.
After graduation, Spelling
moved to Hollywood in 1953.
As an actor, he appeared in
more than fifty shows and a
dozen films (Dragnet
Gunsmoke, and 1 Love Lucy).
He began his writing career with
the Zane Grey series. Some of
the many top rated series he has
produced are The Danny
Thomas Show, Mod Squad,
Charlie's Angels, Starsky and
Hutch, and Fantasy Island.
Spelling continues to produce
films and television. His two
children, Tori and Randy, are
both actors.

taste stimulate the appetite - an
important assist for the digestive
process.
The circulatory system is
aided by a diet which includes
olive oil - reducing the risk of
arterial sclerosis and other
circulatory ailments. The non-
saturated fats which make up
olive oil, not only are
cholesterol-free, but have
actually been shown to reduce
cholesterol levels.
Cooking with Olive Oil
Many of us think of olive oil
only for salad dressing, but in
fact it’s a healthy and tasty
substitute for butter, or
vegetable oil in almost every
aspect of cooking.
Saute/pan frying: There's
nothing tastier than onions
sauteed in olive oil or a nice
slice of chicken breast pan fried
to a golden brown.
Frying: An oil which can be
reused repeatedly, without
spoiling or losing its taste.
Foods fried in olive oil are never
greasy or oil tasting.
Fish: A perfect combination
with any fish dish. Splash some
on the next time you bake a
piece of fish.
Salads and Sauces: The only
oil for any salad - oil and
vinegar, oil and lemon, etc. Try
it in mayonnaise, or just pour a
good squirt over those boiled or
masked potatoes, steamed
vegetables, etc.
Breakfast: Sprinkle it over
the morning slice of toast
instead of butter. Great!
You won't get very far in any
Italian cookbook without at
least one kind of olive oil. It's
graded according to acidity,
extra virgin having the lowest
level, virgin being slightly more
acidic, and regular olive oil
having the highest level.
Extra virgin is the most
expensive and has the most
distinct flavor, ranging from
mellow and buttery to green and
“olive-y.” The flavor breaks
down at high heat, so extra
virgin olive oil is best saved for
raw applications such as
dressing salads and sandwiches,
flavoring uncooked sauces, and
dipping bread. Regular olive oil
is great for sauteing, frying, and
coating roasted meats and
vegetables.
What's Wrong with this oil?
When shopping for extra-
virgin olive oil, you -may see
bottles that look cloudy or have
sediment at the bottom. Both
characteristics come from tiny
particles of olive pulp, and
signify that the oil is unfiltered.
To make extra-virgin olive oil,
whole olives are crushed and
then pressed. After removing
any water, most manufacturers
pass the olive oil through a
series of cloth or paper filters.
But some skip this last step -
thus the murky appearance.
Health and Diet
Fats and oils are an essential
part of a balanced diet. Olive oil
is easily digested - it's quickly
and completely absorbed by the
system. Also trace components
like chlorophyll help the

Knowledge and Skills (TAKS)
testing next Tuesday, February
24th. It is very important that
each child be present and on
time to school. Please do not
plan any doctor or dentist
appointments for your child on
that day. You can assist your
child in doing his/her best by
making sure that he/she gets
enough sleep the night before
and has a good breakfast on
the morning of the test.
