Bean Sprout gets makeovernfluenced by the coffee house craze of the '90s,
the Bean Sprout transformed from a dingy basement
into a savvy cafe. Donning a fresh image for
1996, the sidekick of the World Famous Bean has
made a new name for itself complete with a gourmet -
but affordable - menu, a soda fountain and Starbucks
Coffee.
Dining booths were added by the walls, and a
stage for daily live entertainment also was constructed
to enhance the atmosphere of the new eatery. Gayle
Soules, coordinator of student activities, worked with
Food Services to bring in bands, solo acts, comedy
acts and even theatre productions.
After its opening in February, the Bean Sprout
conducted numerous events such as Opera Night. The
Bean Sprout was transformed into a classy Italian
restaurant for Opera Night, serving fresh Italian cuisine
accompanied by live opera courtesy of the Music
Department.
Ed Jenkins, manager of ARAMARK, said most of
the ideas came from students. A committee within the
Students' Association worked with Mr. Ed in every
step of the planning process. "The students wanted a
1950s cafe, but the 1950s they wanted wasn't the
1950s I remembered. We had to revamp the plans a
bit," Mr. Ed. said.
After each revision the student committee was
consulted. Committee member Lacey Hogue, sophomore
elementary education major from Holliday, was
pleased with the outcome. "All the booths and the
stage were just like we wanted them, but I like the
decorating better than what we'd planned."
The renovation required more than just a paint job
and new tables. Mr. Ed said even the air conditioning
in the building had to be changed because of the additional
lights.
The renovation did not cost students directly.
ARAMARK funded the project and will cover costs
through a seven-year period.
Dr. Charles Trevathan, vice president of campus
life, said the Bean Sprout was another effort "to
enhance campus life in as many different aspects as we
can."AStudents enjoy lunch in the new and improved Bean Sprout. Changes and improvements
include new tables and chairs, track lighting, a large stage for live entertainment,
