2 teaspoons cornstarch
1 cup chicken broth
3 tablespoons vegetable
oil
2 crushed garhe cloves
1 tablespoon minced fresh
ginger root
2110 ounces each i packages
frozen asparagus
1 pound frozen peeled shrimp
Soy sauce
Dissolve cornstarch in broth
and set aside Heat oil in wok.
Saute garlic and ginger 3 min-
utes. Discard garlic. Add aspa-
ragus and cook till spears sepa- ,
rate. Add shrimp, chicken
broth mixture and soy sauce to
taste. Simmer 5 to 10 minutes
till seafood is cooked and sauce
slightly thickened. Sene. Good
with a dry white wine, well
chilled.

In 1912, a naturalist named
Clarence Birdseye noted during j
an expedition to Labrador that
fish frozen in this subzero re
gion regained its freshnes
when thawed.
Birdseye spent the next dec-
ade experimenting with fish
and other foods and finally
came up with a primitive freez-
er. He sold his idea to the food
industry and half a century
ago, on March 6, 1930. the first
assortment of frozen foods, in-
cluding meat, fish, fruit and
vegetables, went on sale at re-
tail in Springfield, Mass
Today frozen food has be-
come a multibillion-dollar in-
dustry' featuring more than 1,-
500 items. As the industry pre-
pared to mark its 50th birth-
day, I talked to two leaders in
the field.
I asked Thomas B House,
president of the American Fro-
zen Food Institute, whether he
expected any immediate
changes in frozen foods. A big
jump in microwave cooking, he
replied,'and a big saving m
energy.
■ Microwaves are expected to
reach 25 percent of U.S. house-
holds by the end of 1980," he
said. "And frozen foods will -
play a major role. Frozen fish
fillets cooked in a microwave
oven, for example, will save 90
percent of the energy required
to cook in a conventional J
oven."
Recalling that during World
War II stores selling only fro-
zen foods cropped up all over
America, I asked Murray Lend-
er, a veteran in the field and
chairman of the 50th anniversa-
ry celebration, whatever had
happened to them.
Frozen food stores fell by
the wayside with the coming of
the one-stop supermarket.” he
said. "It’s significant to note
that the typical market today
devotes much more area to fro-
zen foods/than the entire fro-
zen-food store did."
-There are still many Ameri-
cans who insist that fresh food
is better than frozen. But dur-
ing the offseasons some of
these foods can be costly. Still
more important, in this day of
working wives and long com-
muting hours, much time is ■
saved using frozen foods and I
don't mean TV dinners, neces-
