Soda Bafh:
Of course we are not sure tha;
fruits and vegetables da sour and
spoil, but we a.e somewhat of the un.
p.ession that they keep perfectly for a
certain length of time and then begin
to sour, but this acid formation be-
gins tn soan as they are taken from
the parent plu t. They a.e changing
flav ■ and developing bacterial growth
that will be harder to kill the longer
they wait, hence the rapid working
slogan and the blanching in the soda
bath (ono teaspoon to a gallon of
boiling water put in just as the veg-
etables are plunged in.) The soda
1 is a base that counteracts the acid
' development and also helps to retain
; the color f the vegetable.
Cold Sait Dip:
Directions that follow will suggest
that products be blanched in the soda
bath and plunged for two or three
| seconds in a cold salt dip (one-fourth
i cup of salt to a gallon of water) this
j ale helps to set color and make the
: product firm. '

Lbe arivon for many canned vegetables,
j This amount of sugar is not to add
sweat ness to the product, but to bring
j it back to its normal sweetness be-
cause cooking changes fruit and veg-

in this way to thojfe canned without
sugar and salt seasoning.
Baby Becks:
DeHs used for canning should bo of
uniform deep red color throughout. In
preparing for pro-cooking the stems
should not be cut close as that would
allow the color to escape from the
beet. From the .standpoint of quality
only young, tender beets should be
canned. Sort, putting untform sizes
together, .steam fo rabout 20 minutes
