Beaumont Texas May 5 The disastrous

was a deplorable thing for Beaumont Just
at this time The Southern Pacific station

with enough milk to cover it Let this
steam until tho lettuce Is tender ndd a
dash of pepper and a tnblespoonful of but-
ter Let It stand till the butter Is melted
and serve
The water In which vegetables are boiled
If drained off should be saved for the soup
pot Otherwise It should be allowed to
simmer down nnd become part of the sauce
for It contains a great deal of thp bicar-
bonate of potash which makes vegetables
wholesome
The French make a delicious dish by
boiling young tender peas In a little water
adding n tablespoonful of butter A head
of fresh clean lettuce Is set In with tho
peas and allowcil to steam thoroughly
until tender The lettuce Is then removed
to a heated platter a little milk added to
the pens mixed wlTTi n lenspoonful of flour
When this comes to the boiling point the
thickened peas nic poured over and around
the lettuce and served
Watercress cooked In the same way as
spinach and served with butter and a
bard boiled egg chopped fine Is nn excellent
dish Cabbage cooked after the following recipe
Is palatablo to many people who can not
eat the vegetable as ordinarily cooked
Chop tho cabbago as tor rold slaw and put
It Into a pot of salted boiling water Boll
exactly twenty minutes not a mlnuto
longer Drain off the water add sufficient
milk to cover n dash of puprlka and n lit-
tle buttei1 and flour mixed When this be-
comes quite hot again shake In liberally
grated Parmesan cheese Let It otund a
few minutes and serve This Is a good
lunch dish where little meat Is eaten Tho
milk aud cheese make It quite substantial
A clove of garlic boiled with cabbage glvet
It a most delicious flavor not at all gar-
licky
Small radishes boiled whole with a spoon
fnl of minced parsley make n delicious salad
when cold Serevo with a lVench dressing
A very good Maredolno salad It made bv
adding to the radishes anil parsley rold
stewed celery and string beans Make n
niaronalse dressing and ndd to It a table-
spoonful each of pickled nnsturllnm seeds
and chopped chives Mix this with thq
Macedolne nnd serve
The pods of peas which we extrava-
gantly thinw away are never watted by tho
thrifty French woman Covered with water
they are allowed to simmer then pressed
through a colander This makes an excel-
lent stock In which to boll lettuce With
the nddltlnn of a single slice of bneon a
pinch of thyme nnd a clove of girlie It
mskes nn unusually good soup
