1 Tablespoon lime juice
Hot pepper sauce to taste
1/2 teaspoon salt
1 tomato, seeded and chopped
1 Tablespoon cilantro, chopped
Cook peas according to
package directions and let cool.
Puree in a blender or place in a
resealable plastic bag and mash
by hand. In a medium bowl,
combine pureed peas, onion,
garlic, sour cream, lime juice,
hot pepper sauce, and salt. Mix
until well blended. Stir in the
chopped tomatoes and cilantro.
Cover and refrigerate at least 1-
2 hours to allow flavors to
blend. Enjoy with your favorite
vegetables, com chips, or
whole-wheat crackers. Serves
6.

Feed Prices Expected To Be
High This Winter
What started out looking
like a potential banner year for
crop producers in the mid-
west has turned sour in the last
few weeks. Blistering heat and
drought in much of the mid-
west has turned the potential
for above average yields
around. In April, experts were
predicting a potential average
of 170 bushels of com per
acre. That figure is now stand-
ing on a shaky 145 bushels,
and with little rain and high
temperatures in the 7 day fore-
cast, that number could drop
more. Many important com
producing states have experi-
enced the second driest June
since the Dust Bowl, and soil
moisture profiles in many
areas are the lowest since
1895.
As of early Monday
morning, grain prices continue
to creep upward and are
already within $.30 of $8.00
per bushel for September and
December corn. Soybeans
were already in short supply
due to a decrease in planted
acreage, so the dry hot weath-
er will continue to increase the
feed protein prices as well.
Some market analysts are pre-
dicting $10 com and $20 soy-
beans. As a result of these
increases in feedstuff, cattle
prices continue their slow
descent. It appears sales on all
classes of cattle have reacted
with lower prices; lighter
weight calves having been hit
the hardest.
Higher grain and protein
coupled with drought will lead
to more liquidation of an
already small cattle herd, "the
lowest beef cattle inventory
since 1952." This will suspend
the rebuilding phase of the cat-
tle herd and continue to
increase an already high cost
of production. Dairy produc-
ers whom are already experi-
encing dismal pricing coupled
with high inputs will be under
even more strain to manage
high inputs with low prices.
Pork and poultry producers
will be hit hard due to their
complete dependency on
crops as a feed source. At least
with cattle, we can grow much
of our own feedstuff in the
form of forages, as long as we
get some moisture.
While much of
Comanche County is dry, we
have had a relatively good
year, especially compared to
last year. Most producers have
had some good hay cuttings,
and hopefully most livestock
producers have restocked their
hay supplies. The silage har-
vest yield has been good, and
quality has been good.
Livestock producers need to
have a plan on how to deal
with the increased feed cost
this winter. Extra hay stocks
and grazing small grains are
two options to consider.
It is expected that con-
sumer prices at the grocery
store will rise as a result of the
crop conditions. While most
grocery items will be affected,
beef and pork prices will most
likely see the biggest increases
at the grocery store.
