Taco Delite in Wylie is own-
ed and operated by Jim and
Jane Smith, along with their
son-in-law, Terry Greaves.
This is one of the eleven in-
dependently owned Taco
Delites in the area.
These small businesses are
managed by families or close
life-time friends.
Jim spent twenty years with
Texas Instruments as
manager of the Airbourn
Radar Drafting Department.
There he controlled the
design and development of
radar systems for all govern-
ment F4-C and F-lll major
fighter air crafts.
Jane worked with Dallas's
Ex-Mayor Buddy Folsom as
an assistant in his commer-
cial real estate business.
When asked why Jim and
Jane got in this business,
leaving successful responsi-
ble positions, Jim replied, "I
knew if I was successful, I
would reap the reward and if
a failure, I would be the
failure. The Lord has been
good to us. I came to this area
in 1954 and I have not had
one day of unemployment. I
believe in working for what I
get.”
This facility in Wylie was
built by the Smiths at a cost
of half million dollars. It was
specifically designed to serve
the people of Wylie and the
surrounding areas. It
employs fifteen local
residents.
“ We aren’t trying to be
millionaires. As long as we
make a living, provide food
and service we can all take
pride in, we will be happy.
Our kitchen is open for in-
spection anytime. We serve
our customers fast, with a
clean wholesome product. We
encourage anyone who has a
problem with our food or per-
sonnel to come to us
directly”, states Jim.
The food at this eatery is
prepared fresh every day.
Beans are sorted and cooked
from “scratch” each morn-
ing. Lettuce and tomatoes are
chopped and Wisconsin Ched-
dar cheese is grated from 40
pound blocks. Tortillas are
made fresh daily with no
preservatives. All their
seasonings are specially
blended for Taco Delite. Only
80 percent lean fresh meat is
used, which is ground daily.
The Smiths are committed
to this and love their
customers. Before ground
was broken for this
restaurant, Jim, Jane, and
Terry joined the Wylie
Chamber of Commerce. When
the Rita and Truett Smith
Library fell on hard times, a
check for a sizable sum was
immediately donated for the
cause. They belong to every
support organization in
Wylie. This family knows
their restaurant is directly af-
fected by the quality of life in
Wylie.

New Officers

The Wylie Fire Department
recently held elections for
new officers. Chief Larry
Allen was uncontested in the
top position. Choya Tapp was
elected as Assistant Chief.
Other officers are Glen Ellis -
Captain, Lewis Barber - Cap-
tain, Craig Wilson - Lieute-
nant, and Craig Swanner was
appointed by the Chief as
Captain of Training.
Wylie Middle School eighth-grader Butch Burleson marks his
ballot during a mock presidential election at the school last Tues-
day. Butch and other students in Geline Dodd’s social studies
classes completed a thorough study of the electoral process
which included making campaign speeches, preparing voter
registration lists, registration cards, and ballots. The final step
was to vote for George Bush or Michael Dukakis on an actual
voting machine Mrs. Dodd had obtained from Collin County elec-
tion officials. Results of the eighth-grade election showed 86
votes for Bush, 49 for Dukakis, and 1 undecided. Similar mock
elections were held on other WISD campuses, with Bush coming
out the winner at each location.
