to a temperature of 180 degs Fahr
and kept at this heat for about 2
hours when tho pan with the bot
tles is lifted off the fire and tho water
fruit etc allowed to cool together for
an hour and a half The bottles are
then taken out of the water allowed to
stand till nest day when they are put
away care being ta ken to pack them
lying oh their sides
Fruit thus preserved i3 ready for im
mediate rise if necessary jorkeeps as well
as fruit preserved in the usual manner
indeed it is said to be superior to tho
latter both in appearance and flavor
the liquid in which it is preserved being
