Save Sugar for Everyones
Share for Home Canning
Start Your Own Rationing
System
Youre on your own this year
so far as home canning sugar is
concerned How much you have
for canning depends upon how
much you save As this Is being
written the revised rationing sys-
tem increases the amount of sugar
allowed each individual but makes
no provision for additional allot-
ments for home cinnlng
So its entirely up to you to
establish your own syilcm of ra-
tioning setting aside a certain
amount from each individuals
allotment for putting up home
canned foods
If you cant possiblj even by
clfimposed rationing have
enough supir to put up all the
food you want with as much sugar
as youd like then yju can fall-
back on the sugar stretching meth-
ods used with such good results
dur ng the war
Housewives learned then that
fruits for pies puddings and gel-
atin desserts keep just as well
without sugar although its ad-
visable to use a little sugar Ifj
possible with light colored fruits
in order to preserve color Theyl
learned too that a combination
of corn sirup and granulated
sugar gives excellent results
Those who enjoy the taste of
honey learned to use it as a
sugar extender Use of saccharin
Is barred of course because it has
a tendency to produce an un-
pleasant taste
Home canners have also learned
that they can use brown sugar
maple sugar and sirup In butters
jams and spreads although these
are not satisfactory for other can-
ning
Putting up some amount of
fiuit vithout oU ar h a good idea
because you then have it on hand
to make into jams and jellies as
needed
