.Jellied Apples With Raisins.
Pare and core six. tart apples: Cook
for five minutes three-fourths cup of
sugar; one cup of water. Drop the au-
ples into the syrup and turn frequent
ly. When perfectly done remove the
fruit to a glass serving dish. To the
syrup add one-half a cup of seedless
raisins and a teaspoon of lemon juice.
Cook until the syrup thickens. In the
meantime put eight level tablespoons
of .sugar in a skillet with two-thirds
of a cup of blanched and split almonds
or walnuts. Stir over the lire until the
sugar melts and slightly browns. Pqur
over the apples over this pour the
fruit syruv. Cool and serve with whipp
ed cream.
If red skinned apples are used a
ucep rod saure may. be secured by
stewing the skins in sufficient water to
cover and using this instead of clear
water for making the syrup.
