RECIPE
SWAP SHOP
BANANA NUT CAKE
2/3 cup shortening
l'/4 cups sugar
2 cups flour
2 eggs
cup chopped nuts
1 cup mashed banana
1 tsp. soda dissolved in
Vi cup buttermilk
Ms tsp. vanilla
tsp. lemon
l'/« tsp. baking powder
Cream shortening (marjorine
or butter) and sugar; add eggs
and extract. Beat. Add dry in-
gredients alternately with milk
und banana pulp Add nuts. j
Bake in 2 layers at 375 de- j
trees for 20 or 25 minutes or,
bake in stem cake pan at 3501
degrees for 35 or 40 minutes. Al- j
&o use any favorite filling.

DATE NUT PIE
*4 cup sugar
3 eggs
9 large dates
>4 cup chopped nuts
1 stick oleo
2 tbsp. Hour
% cup milk
vanilla and salt
Put oleo in sauce pan. stir in
flour until oleo melts; set aside.
Separate eggs and beat 3 yolks
well. Add sugar, milk and dates.
Stir last mixture into warm
mixture, and stir until thickens.
Add nuts and pour into baked
pie shell. Cover with meringue
made of 3 eggs whites and 0
level tbsp. sugar and '4 tsp.
tream of tarter. Also vanilla.
Bake at 32"> degrees for 20 min-

TUNA CASSEROLE
Slightly grease bottom and
sides of casserole. Cover the
bottom with potato chips that
have been slightly crushed with
hands. Cover potato chips with
contents of one can of tuna
(light meat). Cover tuna with
one small can ol English peas.
Cover peas with one can of
mushroom soup and cover all
these ingredients with remaining
half of a loc sack of poit-to chips.
Place in moderate oven and
cook until begins to boil through
all ingredients.

and Mrs. Harlan Spires, Sunya
and Brent of Burkburnett, their
son and his family, Mr. and Mrs.
David Cooke and Monte, local
residents enjoyed an outing at
Pleasure Bay on Carter Lake
near Bowie Sunday.

King Rogers, now living in Al-
buquerque, New Mexico, visited
friends here during the Easter
weekend.

ed to Kermit to be with her
mother. Mrs. Alice Gifl'in after

PEABODY H. D. CLUB HAS
COOKING DEMONSTRATION
The Peabody Home Demon-
stration Club met Wednesday,
March 22 with Mrs. Wayne
Thompson. In the absence of
the president, Mrs. Thompson,
vice-president, had charge of
the meeting.
Minutes of the last meeting
were read and approved. The
group discussed the District
T.H.D.A. meeting in Gainesville
on Aprill 11th.
Mrs. Thompson, foods leader,
gave the program on "Meal
from Your Pantry Shelf." A meal
I was prepared as the demonstra-
1 tion and was enjoyed by those
| present. They were Mmes. Chas.
Wilson of Gladys. Jack Hogan
of Hardy, visitors; and members
were Mmes. H. L. Bowen, L. W.
Young. J. P. Embry. C. L.
Young and the hostess, Mrs.
Thompson.
The first meeting in April will
be Friday. April 7th at 2:00 p.m.
when the clubs will meet for
an electrical appliance demon-
stration at the Newby-McGaughy
Appliance Store at Saint Jo.
The next regular club meet-
ing will be Wednesday, April 26
with Mrs. H. L. Bowen.
