Texas supermarket shoppers
began embracing a new generation
of fresh beef products this summer
through a unique national-state beef
checkoff promotion.
The promotion's goal is to raise
consumer awareness of the Flat Iron
steak. This highly tender,
uniformly consistent steak is a new
Beef Value Cut that was developed
through checkoff research, said
Natalie Carter, National
Cattlemen's Beef Association
(NCBA) southern regional retail
manager. The Texas promotion is
helping launch this cut in retail.
"The timing for this promotion
was right," Carter said. "We've
been pounding the pavement about
Value Cuts, and as a result retailers
are becoming knowledgeable about
the importance of these cuts in
satisfying their customers' needs."
The Beef Value Cut line-up
includes 10 new steaks and roasts
developed by the beef checkoff
program through new processing
technology. Consumers perceive
these cuts as great values because
they offer uniform consistency and
tenderness at a reasonable price.
The promotion launched in late
July. Participants include NCBA,
the Texas Beef Council (TBC),
Tyson Foods and Kroger's 116
Houston stores. Promotional
activities involve in-store demos,
point-of-sale materials, billboards,
radio and newspaper ads and a
public relations campaign. Flat Iron
steaks are offered as case-ready
products with an on-pack cooking

"The demand for this product is
tremendous and the results of this
promotion thus far are impressive,"
Carter said. "Some demonstrators
are selling 60 to 70 steaks in one
day during the in-store demos. We
even had one that sold 116 steaks."
The buzz surrounding the new cut
also caught the attention of media.
NCBA and TBC joined Kroger and
two Houston chefs at an Aug. 31
news conference to promote the

news program to highlight the new
cut and the chefs preparing it.
The Texas promotion will

Dallas stores as well.
Texas beef producer Leo
Vermedahl, chairman of TBC's
board of directors, said the
successful promotion is important
to beef producers for many reasons.
First, the promotion launches a
new cut that adds value to the beef
industry. Second, it illustrates the
effectiveness of the checkoff. And,
finally, it unites the checkoff with
suppliers and retailers to sell more
beef.
"This promotion was made
possible through checkoff-funded
research conducted years ago that
told us what consumers want,"
Vermedahl said. "Then that research
was applied to new technology to
create Beef Value Cuts. The
checkoff promoted these cuts to
foodservice and now to retail. And
through this state-national checkoff
promotion in Houston, national
partners such as Tyson and Kroger
help us leverage our checkoff
investment."

In 18th century America,
artists journeyed from town to
town with paintings of men and
women, complete in every fea-

select the body he liked best and
let the artist fill in the missing
