King in the Valley Baby Pageant, of Adan and Mariccla Castillo, took ;i
third place white ribbon in the beauty division and a first place trophy

New Grade Change Helps
Consumers Seleet Lean Beef

November 23, USDA "good"
graded beef becomes USDA
"Select," and for consumers, it's
more than just a name change.
The Public Voice for Food and
Health Policy, along with twelve
other national consumer groups
supported the change in USDA
regulations as a means of insuring
consistently high quality lean beef
for shoppers.
USDA beef grades indicate
juiceness and tenderness, which is
produced by flecks of fat or"
marbling" within the red meat. On
that measure, USDA "Prime,"
usually sold in restaurants, is the
highest grade, "Choice" is the next
highest and "Good" was the term
applied to the leaner cuts.
According to Marilyn Haggard, a
food marketing expert and nutri
tion specialist with the Texas A&M
University Agricultural Extension
Service, retail grocers typically do
not label USDA Good meat as such,
because of the lack of consumer
appeal for the name.
"To market their lower graded
beef, grocers use "house-grade
names," which are similar to store
brands in other types of food
products," she explains.
"These house brands, however,
often include more than USDA
Good grade beef, they may also
contain even lower grades such as
USDA Standard and USDA Com-

Haggard says the result has been
extensive variation of eating quali
ty in the leaner, less expensive cuts
of beef offered to consumers. As
retail stores begin to market USDA
Select, rather than house-grades,
consumers will get a more con
sisitent product.
She acknowledges that while the
USDA Select label will help con-
sumers identify quality lean meat,
they can still wind up with a
less-tender product is it's not
prepared properly.
"Because of the reduced meat
amount of fat, lean beef should be
marinated before broiling or grill-
ing For baking or frying, pound
with a meat hammer or add a
meat tenderizer."

also helps cut calories since very
little fat is required for cooking."
National research studies have
shown that a large number of
consumers want lean beef, both to
reduce their fat intake and reduce
the plate waste from fat that is
trimmed away before cooking or
eating, notes Haggard.
