Treat your butcher-block
items "right" - don't let
them dry out or get too wet,
says a housing and home
furnishings specialist.
Give them a penetrating-
oil-seal'T finish if you don't
cut on them or place foods
directly on them. Give
them a warm mineral-oil
finish if you do use them fOi
cutting or food preparation
advises Jane Berry, a
housing and home fur-
nishings specialist.

economics staff of the Texas
Agricultural Extension
Service, The Texas A&M
University System.
Be sure to clean butcher-
block surfaces before
treating them. Remove
heavy food particles or
foreign matter on the sur-
face with a steel scraper or
spatula Brush all loose
particles from the surface
Tnen, using a soft bristle
fiber brush, scrub the sur-
face with a very mild
detergent and water
solution.
You can lift out food and
water stains by adding a
bleach to the detergent
solution. Sponge off the
butcher block surface with
clear warm water and dry
the wood by rubbing with a
soft towel.
To treat butcher-block
surfaces with mineral oil,
CAREFULLY warm the
mineral oil in the upper
po."'.ion of a double boiler.
CAUTION: the oil is
flammable, so do not heat it
diuectly over the heat
source.
Then, using a new paint
brush or a clean pastry
brush, apply warmed
mineral oil generously over
the surface and let it sit for
15-20 minutes.
If the wood will absorb
additional oil, give surfaces
another application and let it
set for about 10 minutes
before wiping off the excess.
Be sure to treat both sides
of the butcher-block surface
with warm oil to avoid
warping. Also, warm
mineral oil is appropriate for
wooden salad bowls and
other wood containers used1
in direct contact with
small amount of household food stuff.
