stantial fence around the cemetery,
something that has been needed
for many years.
Wa have extra large, new cedar
posts on the ground, the material
is bought. It will b ea 26-inch, small
mesh, heavy hog wire and four ot
five barbed wires. This will keep
out stock of all kinds, and should
be a good fence for at least twenty-
five years. Will also erect a nice,
heavy gate which will be painted.
Now, the thing we want you to
do is to help us pay for it. The
material will cost about $60.00,
which does not include the work.
We hope that to be contributed free
by friends of the neighborhood.
If more funds should be received
than is r quired for the fence, it
will be used in cleaning up the
grounds. I believe all self-respect-
ing people have an interest in car-
ing for the burying place of their
people. 1 am sure that means you
and that you want to, and will help.

A READER asks whether kid-
neys other than ves!, may be
used in the preparation of dishes for
the table. The answer is that lamb
and beef kidneys both may be used.
As the first are large, they natural-
ly take longer to cook and are gen-
erally sauteed and then allowed to
simmer. Other kidneys may be
broiled or sauteed and will cook in
about 10 minutes.
To prepare kidneys, wash in cold
water and remove fat and skin if
this has not been done by the butch-
er. The beef kidneys are the better
for soaking in salted water for an
hour or so, after they have been
split The others are generally
soaked for 15 minutes or half an
how. The two favorite methods for
cooking kidneys are stewing and
broiling on a skewer, sometimes
with alternate pieces of tomatoes
and mushrooms.

3 tablespoons butter
2 teaspoons minced onion
V« cup flour
2tt cups water
% teaspoon salt
Pepper
2 tablespoons sherry
Wash kidneys, remove fat and
membrane. Split, remove core, and
cut into slices. Soak in cold, salted
water one hour and drain. Saute in
butter with onion three minutes, stir
ia flour and blend well. Let cook
three minutes, or until well-browned.
Stir in water, cover and simmer IS
minutes. Add seasonings and sherry
and heat.

1% teaspoons salt
% teaepnon butter
% cup Salad oil
S tomatoes, quartered
S tablespoons melted butter
Trim kidneys, split in half, length-
wise. and soak in cold, salted water
half an hour. Drain and dry. Sea-
son with salt and pepper and dip

alternately with tomato quarters on
skewers. Broil about IS minutes,

Combine cheese, mayonnaise,
lemon Juice and salt. Mix in pine-
apple and nuts. Fold in bananas
and whipping cream. Turn into
freezing trays and freeze about four
hours. Slice and serve on lettuce
with French dressing.

Cream the sugar and shortening
together. Add the syrup and stir
