Game Meat Is Different In Flavor
Says Tom Joyce Cunningham, HDA
Although game meet is different
in flavor from domestic meat, it
can be palatable and nutritious.
Tom Joyce Cunningham, County
Home Demonstration Agent, says
that standard methods of cooking
beef and lamb are successful for
vension and antelope. Wild game
should be cooked according to the
type of cut and age of the animal,
she adds.
For tender cuts, such as loin
and shoulder, use dry heat. Sea-
son the meat with salt and pepper
and place on a rack in an uncover-
ed pan, fat side up. Do not add
water and do not cover. Kxtra fat,
such as bacon, may be added to
venisin or elk. Roust in a slow-
oven, :jOO to :j."ii> degrees Fahren-
heit, allowing 25 to :!0 mimutes
per pound. If the meat is frozen,
a longer time will be needed for
cooking.
When frying game meat, Mrs.
Cunningham says first to heat the
frying pan until it is sizzling hot.
Then brown both sides of the meat,
turning it only once. Season when
ready to turn. For thick steaks
or chops, reduce heat after brown-
ing to finish cooking. You should

insert a rack under the meat to
prevent over-cooking the meat n?xt
to the pan.
Steaks, chops, or ground maat
patties may be broiled on a hot,
greased broiler rack about three
inches from the heat. If the meat
is very lean, brush it with 'at.
When it is brown enough, season
and turn. Reduce the heat anil ook
until done. Serve on a hot plat .er.
Less tender cuts, such as fl: nk,
round, nimj), or short ribs, can be
made tasty by braising. Mrs. Cun-
ningham says the first step by his
method is to brown the meat si >w-
Iv on all sides in a heavy uti. sil.
Then season with salt, pep,ier,
herbs, spices, or vegetables, .vdd
a little liquid in the form of water,
soup stock, vegetable juice, or sour
cream. Cover closely and cook at
a low temperature until tender.
Cooking it may be done on top
of the range or in a slow over at
not over .'((Ml degrees Fahrenheit.
Proper seasoning for wild g; me
is important, especially if the
"game" taste of meat is not re-
lished. Bay leaves, thyme, mar Or-
am, savory, parsley, chives, green
pepper, celery and onion tops, far-
lie, cloves, sage, all spice, tomatoes,
ketchup, fresh dill leaves, sliced
oranges, apples, and worehes er«
shire are a few suggestions.
Basting wild game with pi -klo
juice, tomato juice, orange, letion
or grapefriut juice, or sour cream
enhances its flavor.
