Ono cupful white or brown rice, four
large ripe tomatoes or one-lmlf can to-
matoes, four teaspoonfuls oil, level,
two tnblespoonfuls sugar, two tea-
spoonfuls salt, one-half teaspoonful1
paprika, one-fourth teaspoonful white
pepper or a little cayenne, two green
peppers, one medium-sized onion,
sliced, bit of bay leaf, ground thyme.
Heat the oil In u heavy frying pan,
and In it delicately brown the pep-
pers and the onions. Remove and
brown the rice, which has been looked
over, but not washed. Add all other
ingredients. Cover and let simmer on
the back of the stove until soft (three-
quarters to one hour); add boiling wa-
ter as the rice swells. Brown rice will
require a little longer cooking. The
green peppers may be omitted.—From

Take six medium potatoes, one egg,
teaspoonful salt, dash of pepper, tea-;
spoonful of cinnamon, one and a half
tablespoonfuls fat. Orate your pota-!
toes, and if liked, grate half of a small
onion in. Beat your egg, add salt,;
pepper and cinnamon. Beat up all
together, thoroughly and put in your
melted fat. Grease your pudding dish,
put In ingredients and put a little bit
of fat on top. Bake in moderate oven
about three-quarters of an hour.
Length of time of baking depends on
your oven. You can put a little sugur
over it if you wish. Do not put sugar
Inside. Will send in other recipes
when you want them. Hope I have
made it plain enough. You can make
potato pancakes from the same mix-
ture by dropping a spoonful on a smok-
ing-hot griddle. Eat with sugar.
"Take the Step."
A story Is told of a rivlval hold In a
town not a thousand miles from the
national capital. A man of murk In
the place for many years and for ever
so long a vestryman in one of tin* oili-

the work of the evangelist and attend-

embarrassed by the plea of the con-
certed barkeeper.
Vegetable Cutlets.
Soak one cupful dried peas over-
night in cold water to cover. Drain,
put in saucepan, cover with cold water
and bring to boiling point. Again
drain, cover with cold water and add
two slices of onion, six cloves, 13 pep-
percorns, a bit of bay leaf, two tea-
spoonfuls salt and one-quarter tea-
spoonful soda. Cook until soft, drain
and rub through a sieve.
Add two-thirds cupful finely-Chopped
peanuts, one cupful dried bread
crumbs, one-half teaspoonful salt, one-
