The Country Cooking column is
coming to you this week from the
kitchen of Bocky Norman, a resident
of the Deport area for almost 65 years.
Bocky was married to Delbert Nor-
man for 38 years prior to his death
three years ago. They had two chil-
dren. a daughter, Abigail Strickland,
husband Sammy and two children,
Philip,age 16aiid Amy, age 12, all of
Deport; and a son, Dana, wife Terry
and two children, Amanda, age 8 and
Stephen, age 5, all of Deport
Having worked for Campbell Soup
for 24 years, Bocky has been retired
for 1 1/2 years and hasn't slowed
down yet She is very active and busy
with volunteer work at the Ella C.
Hospice Center at the St. Joseph's
Hospital in Paris, is a member of the
RSVP in Paris for three years, and
has been doing volunteer work at the
DeportNursing Home for many years.
Bocky has also been a life-long
member of the First United Method-
ist Church in Deport where she is
chairman of the Sunday School Out-
reach Association.
Since her retirement, Bocky works
part time at the Deport Nursing Home.
Between volunteer work and her job,
. Bocky's hobbies include cooking,
sewing and painting T-shirts. The
favorite foods she enjoys cooking is
making fancy party trays for holidays
and special events and she loves to
fry chicken. She also loves to make
her favorite old time chili. She uses
her late father's recipe so the only
way you'll know what is in it, is to eat
a big bowl of it sometime. Among the
fancy foods she makes is her deviled
eggs which she works up with flow-
ers on them.
Bocky recalls the times she cooked
special foods which she enjoys carry-
ing to the sick or whatever the need
might be and to help her family out
she would put signs on the dishes and
write "Nope" on the signs. Bocky
also loves to read cookbooks. She
can sit for hours reading them. She

never cooked as a youngster at home
so she had to learn to cook after she
married. She shared that Delbert was
always easy to please and never
complained about anything she
cooked and whatever she tried to
learn, he accepted it
Sewing is another of her favorite
things to do. She sews a lot of clothes
for herself and her granddaughter
Amanda. She also loves to paint T-
shirts. She took a class a few months
ago and has been carried away with it
ever since. She has painted every
kind of pattern she can think of on a
T-shirt
Bocky contributes much to her dear
mother, Edna Bell, who is a resident
of the Deport Nursing Home. She
says that whatever good has come
from her life, she owes it all to her
mom.
The Ice Box Cookie recipe came
from her mother and she found it in a
Yukon Best Cookbook, published in
the early 1900's. This recipe is really
good to have on hand and bake as
needed.
Bocky first ate the Squash and
Meat Casserole in the early 60’s at the
VA Hospital in McKinney where her
dad was a patient at that time, she
cam ehome and worked up her ver-
sion and has enjoyed it ever since.
The Cornmeal Dumplings have
always been a favorite of hers. She ha
smixed and remixed to get her recipe
to taste as near as her grandmother's
did many years ago. She fed a big
family and had to leant to make do
with whatever she had. She hopes
you enjoy it.
The Bocky's Chicken recipe is one
of her children's favorites. She
adapted it to fit a low cholesterol diet
many years ago and has prepared it
many times.

A birthday party honoring Matt
Swinton his fourth birthday was held
Wednesday at the home of his grand-
parents, Mr. and Mrs. Fred Swint, Jr.
with his parents, Mr. and Mrs. Mark
Swint adn sister Brandi attending,
along with other relatives.
There will be an ice cream supper
at the Community Center Monday
evening at 6:30 p.m. Everyone come
and bring a freezer of cream and
enjoy the fellowship.
The Red River Genealogical Soci-
ety invites everyone to attend the
regular monthly meeting on Mon-
day, August 12 at 7:30 at the Red
River County Library.
A question and answer session is
planned for the program, and those
who attend are asked to bring ques-
tions regarding problems encountered
in doing family research.
Leamon Bailey
Dies July 31
Leamon Bailey, 84, of Texarkana,
AR died Wednesday, July 31.
Graveside services were held at 11
a.m. Friday, August 2 at Ml Pleasant
Cemetery in Deport with Dale Buster
officiating. Burial was under the
direction of Texarkana Funeral
Home.
Mr. Bailey was bom April27,1907
in Detroit and had lived in Texarkana
for a year, moving there from Hugo,
OK. He was a retired truck driver and
was a Baptist
Surviving are his wife, Kate Kelley
Bailey; one sister, Leona Holliday of
Tyler and several nieces and neph-
ews, including Dorothy Nelson of
Texarkana.
Dr. Potts is seeing patients at his office
at 224 10th S.E., Building #1,
from 8-5 p.m., Monday-Friday.

joyed dinner at Ted's.
Mrs. Ethel Epps is spending a week
in Beckville visiting her son and

on vacation to Hobbs, NM to visither

Dies August 3
Hallie Horton, 88, of Seagoville,
formerly of Bogata, died Saturday,
August 3 in Baylor University Medi-
cal Center, Dallas.
Services were held at 10 a.m.
Monday, August 5 in the First Baptist
Church of Bogata with the Rev. Jim
Everidge officiating. Burial was in
Bogata Cemetery by Bogata Funeral
Home.
Mrs. Horton was bom February
16,1903, a daughter of Wallace and
Any Hurt Bryant. She married Wil^>
liam Oscar Horton on October 31^V
1919 in Detroit He died May 11,
1984. 7
Surviving are a daughter, Audrey
Phillips of Seagoville; two brothers,
Gus Bryant of Fulbright and Delbert
Bryant of Bogata; two sisters, Shirley
Wright of Terrell and Pauline Gar-
mon of Detroit; four grandchildren;
seven great-grandchildren; and two
great-great-grandchildren. She was
preceded in death by a son, Wayne
Horton in 1976.

Ranch on Saturday.
Children's Retreat of the Life
Tabernacle Church was held at
Musgrove Ranch Tuesday. The
chilren spent the night and all day
Wednesday. The retreat concluded
with Wednesday night services held
at the church on the ranch.
The 1980graduating class of Prairi-
land High School held their class
reunion at Musgrove Flying M Ranch
Sunday. A large crowd attended.
Rev. Gary Coe and wife, Rhonda
of Jamaica, spent the weekend here
and he conducted services at the Life
Tabernacle Church Sunday.

condition is satisfactory.

Tanna Burchinal who is spending the
week with her grandparents, Mr. and
Mrs. Riley Lynn.

weekend with Mrs. Loretta Pynes.

Ice Box Cookies
1 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
2 cups flour
1/2 tsp. soda
1/4 tsp. salt
1 tsp. vanilla
1/2 to 3/4 cup finely chopped nuts
Combine all ingredients well. Shape
into rolls on wax paper. Chill several
hours, slice 1/8" thick and bake at 350
until light brown. You can use raisins,
coconut or whatever in these. Freezes
well.
Squash A Meat Casserole
4 cups squash (cook with onion until
tender, drain)
1 medium onion, chopped
1 1/2 tsp. chilipowder
1 can cream of mushroom or cream of
chicken soup
1/4 to 1/2 cup chopped green peppers
1/4 cup chopped pimento
salt and black pepper to taste
1 lb. ground meat in 1" cubes
Brown meat in a little oil until done,
drain. Mix all together in ovenproof
dish. Bake at 350 until hot and sprinkle
with grated cheese an bake until cheese
melts. Good without the cheese.
Cornmeal Dumplings
2 cups meal
1/2 to 1 tablespoon salt
3 tablespoons Mexine chili powder
2 cups boiling broth
garlic to taste
I like to use a ham bone or ham hocks.
Boil until meat will come off bone eas-
ily. Shred or chop finely enough meat
for about one cup. Leave rest of meat in
chunks. Have enough broth for about 4
cups. Mix meal, chili powder, salt and
minced garlic with two cups broth to
make a stiff mush. Mix a little chili
powder with shredded meat. Have two
cups broth boiling, mix mush around a
small amount of the meat and add to
boiling broth, when all dumplings have
been added, turn down heat and cook

Dies August 1
Velma Stogner Brown, 87, of
Bogata, died Thursday, August 1 at
McCuistion Regional Medical Cen-
ter, Paris.
Services were held at 2 p.m. Satur-
day, August 3 in Bright-Holland
Funeral Home with the Rev. Tom
Lane officiating. Burial was in Bogata
Cemetery.
Bearers were Jimmie Stewart,
Lanny Stewart, Michael Mathena,
Earnest Smith, David Smith, Stevie
Smith, Brian Mathena and Christo-
pher Mathena.
She was bom August 1, 1904 in
Gainesville, a daughter of Boyless
and Minnie Smith Stogner. She mar-
ried Sam William Brown on Decem-
ber 4,1924 in Paris. He died July 9,
1966. She was a member of the First
Baptist Church of Bogata.
Surviving are two daughters and
sons-in-law, Thelma and Albert
Anderson of Roxton and Wava and
Wily Mathena of Pasadena; four
grandchildren, Jimmy Stewartof Van
Alstyne, Lanny Stewart of Linden,
LA, Linda Smith erf Teague and Beth Randle
Michael Mathena of Pasadena; one IUie
brother, Elbert Stogner of Greenville;
a sister, Helen Herring of Bogata;
nine great-grandchildren and one
great-great-grandchild.

2 bananas
1 cup whipping cream
3 oz. cream cheese
2 tablespoons powdered sugar
1/2 tsp almond extract
2 tablespoons coco nut
Add water to jello, let cool slightly.
Stir in apricots, pineapple and pecans.
Put into serving dish. Put pineapple and
apricots in refrigerator for a while and it
will conjeal faster. Slice bananas over
mixture, whip cream, add softened
creamed cheese and extract, coconut
and powdered sugar. Spread over mix-
ture, sprinkle with coconut if desired.

uncovered. Mixture will thicken as it
cooks. Do not get too thick. Check for
doneness by removing a dumpling and
check in the middle. Add chunks of
meat to brotfi w#ile cooking.
Bocky's Chicken
1 fryer or chicken pieces of choice
1 stick com oil oleo
celery salt
8-10 green onions
1/2 to 3/4 cups green pepper
salt
black pepper
1 cup rice cooked per directions
four for dipping chicken
Cut chicken into pieces, remove skin,
roll pieces in flour, melt oleo and have
hot in large skillet. Brown chicken on
both sides in oleo. Sprinkle with celery
salt, salt and black pepper. Add chopped
green pepper and green onions (some
tops). Reduce heat and cook covered
about 10 minutes. Add 3/4 to 1 cup
water, cover and cook slowly until
chicken is done.
Strain or use as is the drippings from
chicken, pour over cooked nee and heat.
A little sage could be added to the rice to
taste like dressing.
Frosted Apricot Salad
2 cups boiling water
1-6 oz. orange jello
1 can-17 oz. apricots, do not drain
1 can-8 1/2 oz. crushed pineapple, do
not drain
