Wo know this to be the case with

happened In every shop in tho city
This In itself would have a tendency
to force prices up It Is tho poor of
New York who have turned from btef
to mutton to vegetables to eggs and
thenby glutted the market Reef Is
Ulng thero unsold as It In In Chicago
The top nitch of the present high
prices will bo touched between the
middle of May nnd the 1st of June
Then there will bo a slight reduction
In the prices nf the cheaper meats
while the tine grades will remIn high
and probably rise more In any
event wo can not see that beef la over
to be cheap again There are not
enough cattle to make it so and the
population ot the country Is and will
Increase from this on far more rnpldly
than the beef supply on tho hoof
Janus r Iracj Intlrmtely connected
with the retail butchers trade of the
city offered this explanation
The people must become educated
to th positive knowledge that we
have now In this country fr more
mouths to fill with beer than wo have
beef to put In them This state of af
fairs will remain If not forever for
fifty years to come It can never be
corrected until the ranchman has given
way to the diversified farmer has given
o the shambles every jear his alx or
ten head of choice native cattle
been falling because there Is a weak
Lastern demand and the local market
la not strong Beef Is still high to the
consumer Iwcause the retailer has had
to
